Texas Burritos

1 lb. ground beef
1 tsp. garlic powder
1 can refried beans
1 lb. cheddar cheese, grated
flour tortillas, warmed slightly
minced onion (optional)

Brown ground beef and drain well. Add garlic powder, salt and pepper to taste. Season like you would for tacos. Add refried beand and mix well. Place a large spoonful of mixture along center of tortilla. Add about 1 or 2 Tbsp. grated cheese and a few finely minced onions if you like. Roll up, tucking ends in and secure with a toothpick. Fry in about an inch of hot grease, turning once. Drain on paper towels. If you have leftovers, they're great reheated in the microwave.

Chocolate Delight

1 c. nuts
1 c. flour
1 stick oleo
1 8 oz. pkg. cream cheese
1 large tub cool whip
1 c. powdered sugar
1 pkg. instant chocolate pudding
1 pkg. instant vanilla pudding
1 tsp. vanilla
3 c. milk
1 Hershey bar

Mix nuts, flour and oleo; press into a 9 x 13" pan. Cook for 20 minutes at 350. Let cool.

Mix cream cheese, 1 cup cool whip and powdered sugar; spread on top of the first layer and chill.

Mix puddings, vanilla and milk; spread on last mixture and chill. Cover with remainder of the large tub of cool whip. Grate Hershey bar and sprinkle on top. Chill

Divinity

Make when there is little to no humidity for perfect Divinity.

1 c. sugar
1/2 c. water
1/8 tsp. cream of tartar
3 egg whites
2 c. sugar
2/3 c. light corn syrup
1/4 tsp. salt
1/4 c. water
1 tsp. vanilla
2 c. pecans

Put 1 c. sugar, 1/2 cup water and cream of tartar into a saucepan; stir to blend, then boil rapidly without stirring to 240 degrees or until syrup will spin a thread 6" long, dropped from a metal spoon. Immediately remove from heat.

meanwhile, beat egg whites until stiff. In another saucepan have combined the 2 cups sugar, corn syrup, salt and 1/2 cup water. When first mixture is done, place second mixture over heat and boil with occasional stirring until syrup reaches 280 (medium crack stage).

meanwhile, pour the first syrup while still hot, over egg whites adding slowly and beating continuously until stiff and smooth. Set aside until second syrup is done; cool a minute or two. Then pour it slowly over first mixture, continuing to beat until smooth and so stiff that it is hard to handle. Add vanilla and nuts. Onto buttered pan, press out smooth and cut into squares. Makes 2 lbs.

Reese's Peanut Bars

1 1/2 c. graham cracker crumbs
1 box powdered sugar
1 c. smooth peanut butter
1 c. melted margarine
1 large pkg. milk chocolate chips

Combine graham cracker crumbs, powdered sugar, peanut butter and margarine. Press into a sheet cake pan. Melt chocolate chips and spread on top.

If you like lots of chocolate, you can add a small pkg. of chips as well.

Cinnamon Rolls

Refrigerator Dough
1 c. sugar
4 tsp. cinnamon
butter/margarine

Glaze:

1 c. powdered sugar
1 Tbsp. milk
1/2 tsp. vanilla

Roll dough into rectangle. Spread with margarine. Mix sugar and cinnamon and spread on rectangle. Roll up tightly. Seal well. Cut into 1" slices. Place in greased pan. Let rise until doubled. Bake at 375 until brown, about 15 minutes. Drizzle glaze over rolls while still warm.

Dipped Chocolate Drops

3 c. chopped pecans
7 oz. angel flake coconut
1 1/2 boxes powdered sugar
2 6 oz. pkg. chocolate chips
1 stick oleo, melted
1 can eagle brand milk
1 tsp. vanilla
1/4 lb. parafin

Combine nuts, butter, coconut, mix well. Add eagle brand milk and vanilla. Sift sugar and add to mixture. With teaspoon, dip out and roll into balls. Place on cookie sheet and set in refrigerator. Melt chocolate chips and parafin in top of double boiler. Stickk toothpicks in balls and dip in chocolate mixture and place on waxed paper.

Tortilla Rolls

4 12" tortillas
1 8 oz. container of soft cream cheese
1 8 oz. can diced green chiles
1 8 oz. can chopped black olives

Mix cream cheese, green chiles, and black olives by hand. Spread equal amounts on tortilla. Roll and refrigerate for 2 hours. Slice tortilla rolls. May be served with picante sauce.

Cheese Roll

3 lbs. sharp cheddar cheese, grated
1 8 oz. cream cheese, softened
1 small onion, diced
1 Tbsp. Worcestershire sauce
1/2 c. chopped nuts (pecans)
1/2 c. chopped green olives

Mix all ingredients well. Form into ball or log and decorate with sliced green olives and paprika. Makes several rolls or logs. Freezes well.

Ham Roll Ups

1 jar pickle spears
1 pkg. cream cheese
thin sliced ham

Combine softened cream cheese with 1/4 c. juice from the pickles in small bowl with spoon. Slice dill spear in half (longways). Spread cream cheese mixture on ham slices and roll up with dill spear inside. Continue until all spears are used. Chill. Slice crosswise making bite size pieces. Insert toothpick in each and serve.

Bran Rolls

1 c. Nabisco 100% Bran
3/4 c. sugar
1 1/2 tsp. salt
1 c. boiling water
1/2 c. oil
2 eggs, beaten
2 pkgs yeast
1 c. lukewarm water
5 - 6 c. flour

Mix bran, sugar, salt, boiling water and oil well with mixer. Add eggs. Dissolve yeast in lukewarm water. Add to mixture. Add 5 - 6 c. flour. Set in refrigerator several days or overnight. Knead, roll out, cut rolls, let rise. Bake at 350 for 15 minutes.

2 c. warm water
2 pkg. dry yeast
1/2 c. sugar
5 1/2 c. flour
1 tsp. salt
1/2 c. oil
1 egg

Mix good. Knead on floured board till easily handeled. Add 1 - 2 c. more flour if needed to work dough smoothly. Place in greased bowl and refrigerate. Let rise. Punch down and make into rolls. Bake at 375 until brown, about 15 - 20 minutes.

Banana Bread

1/3 c. oleo
3/4 c. sugar
1 egg well beaten
2 c. bran flakes
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
1/2 c. chopped nuts
1 1/2 c. mashed banana
2 Tbsp. water
1 tsp. vanilla

Cream sugar and oleo. Add egg and branflakes. Sift together dry ingredients. Add nuts. Combine banana and water, dry ingredients and banana alternately with sugar mixture.

Bake at 350 for 30 minutes.

Summer Sausage

2 lbs. ground lean beef
2 Tbsp. (morton's) tender quick
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/43 tsp. dry ustard
1 tsp. whole peppercorns
1 c. water
2 Tbsp. liquid smoke

Mix thoroughly by hand. Shape into 3 rolls. Chill 24 hours. Bake 2 hours at 250 on broiler rack.

Dirt Cake

8" plastic flower pot and new garden trowel OR 8" child's sand pail (plastic) with shovel and silk flowers (1 stem)
2 sm pkg. instant vanilla pudding
2 3/4 c. milk
1/2 stick margarine
8 oz. cream cheese
3/4 c. powdered sugar
12 oz. cool whip
1 1/4 lbs. oreo cookies (crushed)
1 pkg. gummy worms (optional)

Cream together margarine, cream cheese and powdered sugar.

Mix pudding and milk together. Add to cream cheese mixture. Add cool whip to this mixture.

(If you use a flower pot with hole in the bottom, put cool whip in the boom of pot)

Layer cookie crumbs, cream cheese mixture and worms, beginning and ending with cookie crumbs.

Stick flower in mixture and serve with shovel.

Best Rum Cake Ever

1 or 2 qt. rum
1 c. butter
2 large eggs
1 c. dried fruit
1 c. nuts
1 tsp. baking powder
1 tsp. soda
1/2 pt. lemon juice
1 c. brown sugar
1 tsp. sugar

Before you start, sample the rum for quality, good isn't it? Now go ahead, select a large mixing bowl, measuring cup, etc. Check rum again to be sure it is of the highest quality, pour 1 level cup into a glass and drink it as fast as you can. Repeat.... with an electric mixer beat 1 cup of butter in a large fluffy bowl, add 1 tsp of thugar and beat again.

Meanwhile, make sure that the rum is of the highest quality, try another cup. Open second bottle if necessary. Add 2 arge leggs, 2 cups fried druit, and beat until high. If druit gets stuck in beaters, just pry loose with a scredriver. Sample the rum again, checking for tonsistency. Next sift 3 cups peppter or salt, (it doesn't really matter which), and sample the rum again. Sift 1/2 pink of lemon juice, fold in chipped butter and strained nuts. Add 1 babblespoon of brown thugar, or whatever color you can find, wix mell. Crease oven and turn cake dan to 350 gredees. Now pour the whole mess into the coven and ake. Check the rum again and bo to ged.

Quick Cobbler

1 stick butter
3/4 c. flour
1/2 c. sugar
1 tsp. baking poder
1/2 c. milk
1 (no. 2) can fruit or 2 1/2 c. cooked sweetened fruit

Melt butter in baking dish. Mix flour, sugar, baking powder and milk together. Pour mixture over melted butter in baking dish, then pour on fruit. Bake 15 minutes at 450 then 20 minutes at 350.

Icebox Rolls

1/4 c. water
2 pkg. yeast
1 egg
6 to 7 c. flour
1 Tbsp. salt
2 c. milk
1/3 c. sugar
1 c. shortening or 2/3 c. oil

Dissolve yeast in water. Cream sugar and shortening. Beat egg in sugar and shortening; add to water and yeast. Add flour, 2 cups at a time, mixing well. Set in refrigerator. Will keep at least 3 days.

When ready for rolls, pinch off as much as you want. Let rise double in size. Bake at 425 until brown.

Grandma's Lunch Rolls

1 pkg. yeast
1 1/2 c. warmed milk
1 Tbsp. sugar
1 tsp. salt
4 c. flour
1 egg
2 Tbsp. oil

Add yeast, sugar, salt and oil to warmed milk. Then add 2 cups flour. Beat until smooth, then add egg and 2 more cups of flour. Let raise 2 hours; form into rolls. Bake for 10 minutes at 450 (no knead)

Mexican Casserole

2 lb. hamburger
1 can mushroom soup
2 cans Ranch Style beans
1 can green chiles and Ro-tel tomatoes
1 large onion
garlic salt or regular salt to taste
black pepper to taste
tortillas
grated cheese

Arrange in 2 layers each with tortillas. Bake at 350 for 1 hour. Use grated cheese on top.

Pork Chops and Vegetables

Worcestershire sauce
onions
tomato sauce or soup

Salt pork chops and roll in Worcestershire sauce or season with Worcestershire powder. Then roll in flour and brown in skillet. Add diced potatoes, carrots and onions. Leave grease in skillet. Add 1 can tomato sauce or tomato soup. Cover and simmer for 30 to 40 minutes or until vegetables are done.

Pasta Salad

vegetables (your choice of broccoli, cauliflower, carrots, celery, black olives, green pepper, etc)
1 pkg. each good seasons dressing mix, and classic herb and cheese and garlic
1 (12 oz.) pkg. spiral pasta
1 (16 oz.) bottle Italian dressing

Cut up vegetables of your choice. Sprinkle with dry dressings. If you can't find classic herb, use zesty Italian or experiment with others. Gently toss dressing mixes with vegetables.

Cook spiral pasta and toss with vegetables. Add Italian dressing (liquid). Refrigerate mixing occasionally. Best if made 1 to 2 days ahead. Ham or pepperoni can be added to salad.

Elephant Stew

1 large elephant
10 gal. brown gravy
5 lb. each salt and pepper
2 rabbits (optional)

Cut elephant into bite size pieces. Allow about 2 weeks. Cover with brown gravy and cook over kerosene fire for about 4 weeks at 465. This will serve 3,800 people. If more are expected, the rabbits may be added, but do this only if necessary, as some people do not like to find hare in their stew

5 Hour Stew

4 lb. chuck roast
15 to 20 small potatoes
2 lb. carrots
1 whole celery
1 (10 oz) tomato sauce or 2 small cans
3 Tbsp. tapioca or rice
2 Tbsp. Worcestershire sauce
2 Tbsp. brown sugar
2 tsp. lemon juice
2 small bay leaves
1 can English peas
salt and pepper to taste

Arrange meat and vegetables in a large roaster. Mix other ingredients; pour over meat and vegetables. Bay leaves atop; cover tightly. Bake 5 hours at 250. Do not raise lid. No peeking!

If peas are used, add approximately 30 minutes before serving. Can be divided and frozen. Serves 15. Very good served with salad and hot rolls.

Chex Party Mix Recipe

2 c. Wheat Chex cereal
2 c. Corn Chex cereal
2 c. Rice Chex cereal
3/4 c. salted nuts
6 Tbsp. butter
4 tsp. Worcestershire sauce
1 tsp. seasoned salt

Heat oven to 250. Melt butter or margarine in a large shallow pan over low heat. Stir in Worcestershire and seasoned salt. Add the cereals and nuts. Mix over low heat until all the pieces are coated. Heat for 45 minutes in the oven, stirring every 15 minutes or so. Spread out on absorbent paper to cool.

Yields 6 3/4 cups.

1 box Corn Chex
1 box Cheerios
1 can shoestring potatoes
1 Tbsp. garlic salt
2 Tbsp. Worcestershire sauce
1 box Rice chex
1 box pretzels
nuts
1 Tbsp. brown sugar
2 c. salad oil

Combine dry ingredients. Add liquid and bake in oven at 250 for 1 1/2 hours stirring frequently.

Sausage Cheese Crumbles

1 lb. hot or mild sausage
1 lb. sharp cheese, grated
3 c. prepared biscuit mix

Have ingredients at room temperature. Thoroughly combine sausage, cheese and biscuit mix. Form into small balls. May be cooked immediately, refrigerated, or frozen. Bake in a 400 oven for 15 minutes.

Cheese Sticks

2 c. all purpose flour
1/4 tsp. salt
3/4 tsp. cayenne pepper
2/4 lb. oleo
1 lb. sharp cheddar cheese, grated

Sift flour, salt and pepper into bowl. Cut butter in small pieces and add to dry mix until it forms crumbs with fork. Add cheese; continue working until it hold together. Divide into 4 units. Roll out to rectangles 1/3" thick and cut into strips 1/2" wide and 4" long. Bake at 375 for 10 to 12 minutes.

Cornbread Salad

1 box cornbread mix (jiffy)
2 cans pinto beans, drained and rinsed
2 cans whole kernel corn, drained
2 bell peppers, diced
4 tomatoes, diced
1 bunch green onions, diced
1 lb. bacon, cooked crisp
2 c. cheese (I use cheddar)
1 c. sour cream
1 c. mayonnaise
1 pkg. dry ranch mix
good pinch sage
1/4 tsp. cumin

Mix cornbread mix according to directions on package and add sage and cumin. Bake according to directions, half and set aside.

Mix sour cream, mayonnaise and ranch mix and set aside.

In a casserole dish, crumble half of prepared cornbread in bottom of pan
layer on 1 can of pinto beans
layer on 1 can of whole kernel corn
layer on 1/2 of bell peppers
layer on 1/2 of tomatoes
layer on 1/2 of bacon
layer on 1/2 of green onions
layer on 1/2 of ranch mixture
layer on 1/2 of cheese

Repeat for a second layer.

Refrigerate and Enjoy!
