Chicken Spaghetti

1 chicken cooked and boned
2 1/2 cups elbow spaghetti (cooked in chicken broth)
3 stalks celery, chopped
1 onion, chopped
1/2 green pepper, chopped (also cooked in broth)
1/2 lb. Velveeta cheese, grated
2 cans cream of chicken or cream of mushroom soup.
1 small jar pimentos.

Mix all ingredients together saving 1/3 of grated cheese to spread on top. Bake in oven until cheese is melted and mixture is bubbly.

Sweet Potato Chips

Peel and slice thin sweet potatoes (as many as you want)

Soak in cold water overnight or ice water for a few hours.

Drain and dry well. Fry in deep oil (375) until crisp and slightly brown. Drain on paper towels. Sprinkle with salt or powdered sugar

Cornbread Pudding

This tastes so close to Grandma's cream corn (off the cob) and is very yummy, I personally do not add cheese.

1 can whole kernal corn w/juice
1 can creamstyle corn
2 eggs beaten
1/2 c. sour cream
1 c. milk
1 jiffy mix box
shredded cheese (optional)

Mix all ingredients (except cheese) together into buttered casserole dish and bake at 350 for 45 - 60 minutes, top with cheese if desired

Pineapple Cheese Ball

2 8 oz. philadelphia cream cheese
1 small can crushed pineapple
1/4 green pepper, chopped
onion, chopped
pecans, chopped

Let cream cheese stand at room temperature until soft. Drain can crushed pineapple and add to cream cheese mix. Add green pepper, enough onion to suit your taste and a small amount of pecans. Let set in refrigerator until it is easy to handle. Then roll in chopped pecans to form any size ball you need. Keep refrigerated.

"Crab" Spread

8 oz. imitation crab chopped
2 - 3 tsp. dried minced onion
2 celery stalks minced
8 oz. sour cream
1 Tbsp. lemon juice
2 - 3 tsp. louisiana hot sauce to taste
1 tsp. garlic powder to taste
1 Tbsp. miracle whip

Mix well and chill.

Service with Crackers.

Cinnamon Pickles

15 Large Cucumbers
2 c. lime
4 c. vinegar
2 Tbsp. alum
water
1/2 oz. red food color
11 c. sugar
1 pkg. red hots
8 cinnamon sticks

Peel and core cucumbers, cut in strips, take out the see. Cover with water and lime and let soak for 24 hours.

Rinse 3 times in cool water, soak 3 hours in ice water and drain.

Mix 1 c. vinegar, 2 Tbsp. alum, 1/2 oz. red food color with water to cover. Simmer 1 hour and pour off.

Mix 3 c. vinegar, 3 c. water and 11 c. sugar. Boil until melted. Add 8 cinnamon sticks, 1 pkg. red hots and boil until red hots boil. Pour over cucumbvers and let stand 24 hours.

Drain syrup off pickles, heat and pour in hot jars and seal.

Chocolate Gravy

Apparently I've eaten this before, doesn't sound yummy now though :)

3 Tbsp Fat (butter, shortening, etc)
3 Tbsp flour
3 c. milk
1 c. sugar
2 heaping Tbsp. cocoa
1/2 tsp. salt

Melt fat over moderate heat, add flour and salt and stir until well mixed. Add milk, cook until thickened. Mix cocoa and sugar and add to gravy.

Serve over hot biscuits.

Kosher Dill Pickles

Cucumbers (medium cukes)
1 clove garlic
1 dried red pepper
1/2 tsp. celery seed
2 slices onion
2 slices green pepper
fresh dill
1 c. canning salt
1 quart cider vinegar
4 quarts water
pinch powdered alum

Wash and pack cucumbers in quart jars, add garlic, red pepper, celery seed, green  pepper, inion and dill. Cover with boiling mixture of remaining ingredients and seal.

Mexican Hat

1 lb. ground chuck
3/4 tsp. salt
1 tsp. garlic powder
1 regular jar taco sauce
1 regular can ranch style beans
shredded lettuce shredded cheddar cheese
diced onion
fritos
tomatoes

Make sauce by browning ground chuck, 3/4 tsp. salt, 1 tsp. garlic powder. Then add 1 regular jar taco sauce and 1 regular can ranch style beans. Simmer for 10 minutes.

Top on Plate:
Fritos, meat sauce, lettuce, onions, cheese and tomatoes

Pull Apart Pecan Rolls

1 pkg. parker house dinner rolls, frozen
1 stick butter
1 c. brown sugar
1 c. chopped pecans
1 sm. pkg. butterscotch pudding mix (not instant)
1 tsp. cinnamon

Spray bundt pan with pam and arrange rolls in pan.

Mix all dry ingredients together and pour over frozen rolls. Melt butter and pour over all ingredients. Let set over night to thaw and rise. Bake at 350 for about 25 - 30 minutes.

(may not take all of rolls if it's a big package)

Chocolate Chip Oatmeal Cookies

Preheat Oven to 375

1 c. crisco or 1 crisco bar
2 eggs
1 c. sugar
1/2 c. brown sugar firmly packed
2 tsp. vanilla
1 1/2 c. flour or 2 c. flour if no oatmeal
1 tsp. baking soda
1 tsp. salt
1 pkg. chocolate chips
2 c. quick oats (add with chips)
chopped nuts (optional)

Beat crisco, sugar, eggs, vanilla until crisco is no longer in visible sight by hand

Add dry ingredients. Blend well along with chocolate chips and any optional ingredients.

Drop from large spoon about a little bigger than golf ball size on ungreased cookie sheet. (preferably on an airbake cookie sheet)

Bake 10 to 12 minutes maybe longer depending on size of cookie if it's very large. They should be just turning brown on top but not to brown all over.

Serve with milk, mmmmm.

Crunchy Cheese Ball

1 8 oz. pkg. cream cheese, softened
1/4 c. Hellmann's real mayonnaise
2 c. ground cooked ham
1 tsp. minced onion
1/4 tsp. dry mustard
1/4 tsp. hot pepper sauce
1/2 c. chopped peanuts or pistachio nuts
2 Tbsp. chopped parsley

Beat cream cheese and mayonnaise until smooth. Stir in ham, onion, mustard, pepper sauce and parsley. Cover. Chill several hours. Form into ball; roll in nuts to coat. Serve with crackers

Breakfast Casserole

8 eggs
6 slices bread, cubed
1 lb. sausage, browned and drained
2 c. grated cheddar cheese
1 tsp. salt
1 tsp. dry mustard

Mix altogether and put in greased 9 x 13" pan. Cover and refrigerate for 12 hours or overnight. Bake uncovered at 350 for 35 minutes.

King's Ranch Casserole

2 c. chicken
1 can cream of chicken soup
1 1/2 c. cheese
1 can Ro-Tel tomatoes
1 can cream of mushroom soup
1 bag Doritos

Mix together tomatoes and soups and bring to a boil. While the soups are heating, later the chips, chicken and cheese. Pour the soup over the layered part. Bake at 350 for about 5 minutes.

Chicken Chili

3 large onions
1 stick oleo or butter
2 cans chopped green chiles
2 chickens, boiled, boned and cubed
2 1/2 c. tomato juice
crushed Doritos

Cheese Sauce:

1 lb. Velveeta
1 large can carnation milk

Saute onions in butter or oleo. Layer Doritos, meat mix and sauce. Top with Doritos. Bake at 350 for 30 minutes.

Meat Loaf

1 lb. hamburger
1/4 c. minced green pepper
catsup
1 c. tomato juice
1/4 tsp. pepper
1/2 c. cracker crumbs
1 tsp. salt
1/2 tsp. celery salt
1 tsp. poultry seasoning

Mix all ingredients and place in loaf pan. Pour catsup on top. Bake at 350 for 1 hour
