Seashell Pasta Salad

1 (12 oz) pkg large shell pasta: cooked, rinsed with cold water and drained
1 (28 oz) can cut tomatoes, drained
2 medium carrots diagonally sliced
1/2 red bell pepper cubed
1/2 green bell pepper cubed
1/3 cup sliced green onions
1 (2.25 oz) can sliced ripe black olives drained
1 c. Italian salad dressing
1/2 c. grated parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper

In large bowl, stir together all ingredients until well mixed. Cover and refrigerate 1 hour before serving.

Chicken Enchiladas

Grated cheddar cheese
chopped onion
1 can (sm) mild chilies
2 cans cream of chicken soup
1 soup can milk

Boil chicken and remove from bones. Mix chicken and everything together. Put in softened tortillas. Pour rest over it and put cheese on top. Bake at 250 until cheese bubbles.

Peanut Blossoms

1 3/4 c. flour
1/2 c. sugar
1/2 tsp. soda
1/2 tsp. salt
1/2 c. firmly packed brown sugar
1/2 c. shortening
1/2 c. peanut butter
1 egg
2 Tbsp. milk
1 tsp. vanilla
48 candy kisses

Combine all ingredients except candy kisses. Blend well. Shape into balls and roll in sugar. Bake on ungreased cookie sheet for 10 - 12 minutes. Remove from oven. Top each with candy kiss pressing down firmly so cookie cracks around edges.

Chicken Spaghetti

1 chicken cooked and boned
2 1/2 cups elbow spaghetti (cooked in chicken broth)
3 stalks celery, chopped
1 onion, chopped
1/2 green pepper, chopped (also cooked in broth)
1/2 lb. Velveeta cheese, grated
2 cans cream of chicken or cream of mushroom soup.
1 small jar pimentos.

Mix all ingredients together saving 1/3 of grated cheese to spread on top. Bake in oven until cheese is melted and mixture is bubbly.

Sweet Potato Chips

Peel and slice thin sweet potatoes (as many as you want)

Soak in cold water overnight or ice water for a few hours.

Drain and dry well. Fry in deep oil (375) until crisp and slightly brown. Drain on paper towels. Sprinkle with salt or powdered sugar

Cornbread Pudding

This tastes so close to Grandma's cream corn (off the cob) and is very yummy, I personally do not add cheese.

1 can whole kernal corn w/juice
1 can creamstyle corn
2 eggs beaten
1/2 c. sour cream
1 c. milk
1 jiffy mix box
shredded cheese (optional)

Mix all ingredients (except cheese) together into buttered casserole dish and bake at 350 for 45 - 60 minutes, top with cheese if desired

Cinnamon Pickles

15 Large Cucumbers
2 c. lime
4 c. vinegar
2 Tbsp. alum
water
1/2 oz. red food color
11 c. sugar
1 pkg. red hots
8 cinnamon sticks

Peel and core cucumbers, cut in strips, take out the see. Cover with water and lime and let soak for 24 hours.

Rinse 3 times in cool water, soak 3 hours in ice water and drain.

Mix 1 c. vinegar, 2 Tbsp. alum, 1/2 oz. red food color with water to cover. Simmer 1 hour and pour off.

Mix 3 c. vinegar, 3 c. water and 11 c. sugar. Boil until melted. Add 8 cinnamon sticks, 1 pkg. red hots and boil until red hots boil. Pour over cucumbvers and let stand 24 hours.

Drain syrup off pickles, heat and pour in hot jars and seal.

Blanch Citty

Chocolate Gravy

Apparently I've eaten this before, doesn't sound yummy now though :)

3 Tbsp Fat (butter, shortening, etc)
3 Tbsp flour
3 c. milk
1 c. sugar
2 heaping Tbsp. cocoa
1/2 tsp. salt

Melt fat over moderate heat, add flour and salt and stir until well mixed. Add milk, cook until thickened. Mix cocoa and sugar and add to gravy.

Serve over hot biscuits.

Kosher Dill Pickles

Cucumbers (medium cukes)
1 clove garlic
1 dried red pepper
1/2 tsp. celery seed
2 slices onion
2 slices green pepper
fresh dill
1 c. canning salt
1 quart cider vinegar
4 quarts water
pinch powdered alum

Wash and pack cucumbers in quart jars, add garlic, red pepper, celery seed, green  pepper, inion and dill. Cover with boiling mixture of remaining ingredients and seal.

Dipped Chocolate Drops

3 c. chopped pecans
7 oz. angel flake coconut
1 1/2 boxes powdered sugar
2 6 oz. pkg. chocolate chips
1 stick oleo, melted
1 can eagle brand milk
1 tsp. vanilla
1/4 lb. parafin

Combine nuts, butter, coconut, mix well. Add eagle brand milk and vanilla. Sift sugar and add to mixture. With teaspoon, dip out and roll into balls. Place on cookie sheet and set in refrigerator. Melt chocolate chips and parafin in top of double boiler. Stickk toothpicks in balls and dip in chocolate mixture and place on waxed paper.

Bran Rolls

1 c. Nabisco 100% Bran
3/4 c. sugar
1 1/2 tsp. salt
1 c. boiling water
1/2 c. oil
2 eggs, beaten
2 pkgs yeast
1 c. lukewarm water
5 - 6 c. flour

Mix bran, sugar, salt, boiling water and oil well with mixer. Add eggs. Dissolve yeast in lukewarm water. Add to mixture. Add 5 - 6 c. flour. Set in refrigerator several days or overnight. Knead, roll out, cut rolls, let rise. Bake at 350 for 15 minutes.

Banana Bread

1/3 c. oleo
3/4 c. sugar
1 egg well beaten
2 c. bran flakes
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
1/2 c. chopped nuts
1 1/2 c. mashed banana
2 Tbsp. water
1 tsp. vanilla

Cream sugar and oleo. Add egg and branflakes. Sift together dry ingredients. Add nuts. Combine banana and water, dry ingredients and banana alternately with sugar mixture.

Bake at 350 for 30 minutes.

Summer Sausage

2 lbs. ground lean beef
2 Tbsp. (morton's) tender quick
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/43 tsp. dry ustard
1 tsp. whole peppercorns
1 c. water
2 Tbsp. liquid smoke

Mix thoroughly by hand. Shape into 3 rolls. Chill 24 hours. Bake 2 hours at 250 on broiler rack.

Dirt Cake

8" plastic flower pot and new garden trowel OR 8" child's sand pail (plastic) with shovel and silk flowers (1 stem)
2 sm pkg. instant vanilla pudding
2 3/4 c. milk
1/2 stick margarine
8 oz. cream cheese
3/4 c. powdered sugar
12 oz. cool whip
1 1/4 lbs. oreo cookies (crushed)
1 pkg. gummy worms (optional)

Cream together margarine, cream cheese and powdered sugar.

Mix pudding and milk together. Add to cream cheese mixture. Add cool whip to this mixture.

(If you use a flower pot with hole in the bottom, put cool whip in the boom of pot)

Layer cookie crumbs, cream cheese mixture and worms, beginning and ending with cookie crumbs.

Stick flower in mixture and serve with shovel.

Pasta Salad

vegetables (your choice of broccoli, cauliflower, carrots, celery, black olives, green pepper, etc)
1 pkg. each good seasons dressing mix, and classic herb and cheese and garlic
1 (12 oz.) pkg. spiral pasta
1 (16 oz.) bottle Italian dressing

Cut up vegetables of your choice. Sprinkle with dry dressings. If you can't find classic herb, use zesty Italian or experiment with others. Gently toss dressing mixes with vegetables.

Cook spiral pasta and toss with vegetables. Add Italian dressing (liquid). Refrigerate mixing occasionally. Best if made 1 to 2 days ahead. Ham or pepperoni can be added to salad.

5 Hour Stew

4 lb. chuck roast
15 to 20 small potatoes
2 lb. carrots
1 whole celery
1 (10 oz) tomato sauce or 2 small cans
3 Tbsp. tapioca or rice
2 Tbsp. Worcestershire sauce
2 Tbsp. brown sugar
2 tsp. lemon juice
2 small bay leaves
1 can English peas
salt and pepper to taste

Arrange meat and vegetables in a large roaster. Mix other ingredients; pour over meat and vegetables. Bay leaves atop; cover tightly. Bake 5 hours at 250. Do not raise lid. No peeking!

If peas are used, add approximately 30 minutes before serving. Can be divided and frozen. Serves 15. Very good served with salad and hot rolls.

Cornbread Salad

1 box cornbread mix (jiffy)
2 cans pinto beans, drained and rinsed
2 cans whole kernel corn, drained
2 bell peppers, diced
4 tomatoes, diced
1 bunch green onions, diced
1 lb. bacon, cooked crisp
2 c. cheese (I use cheddar)
1 c. sour cream
1 c. mayonnaise
1 pkg. dry ranch mix
good pinch sage
1/4 tsp. cumin

Mix cornbread mix according to directions on package and add sage and cumin. Bake according to directions, half and set aside.

Mix sour cream, mayonnaise and ranch mix and set aside.

In a casserole dish, crumble half of prepared cornbread in bottom of pan
layer on 1 can of pinto beans
layer on 1 can of whole kernel corn
layer on 1/2 of bell peppers
layer on 1/2 of tomatoes
layer on 1/2 of bacon
layer on 1/2 of green onions
layer on 1/2 of ranch mixture
layer on 1/2 of cheese

Repeat for a second layer.

Refrigerate and Enjoy!
