Amish Chicken Pot Pie

1 (4 lb) chicken
1 bay leaf
2 stems celery, diced
1 onion, diced
 3 c. cooked potatoes diced
2 c. cooked carrots diced
1 c. peas cooked
2 Tbsp. butter
2 Tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 c. milk
2 c. chicken broth
1/2 tsp. Worcestershire sauce

Cook bay leaf and chicken. Debone chicken and reserve broth. Combine cooked vegetables and chicken in a casserole. Melt margarine. Stir in flour, salt and pepper. Gradually add milk and broth, then Worcestershire sauce. Pour over mixture. Cover with pie crust. Bake at 425 degrees for 35 minutes. Reduce heat to warm, 15 to 20 minutes to blend flavors.

Crust:

1 c. flour
1/2 tsp. salt
1/3 c. shortening
3 Tbsp. cold water

Chicken Enchiladas

Grated cheddar cheese
chopped onion
1 can (sm) mild chilies
2 cans cream of chicken soup
1 soup can milk

Boil chicken and remove from bones. Mix chicken and everything together. Put in softened tortillas. Pour rest over it and put cheese on top. Bake at 250 until cheese bubbles.

Chicken Spaghetti

1 chicken cooked and boned
2 1/2 cups elbow spaghetti (cooked in chicken broth)
3 stalks celery, chopped
1 onion, chopped
1/2 green pepper, chopped (also cooked in broth)
1/2 lb. Velveeta cheese, grated
2 cans cream of chicken or cream of mushroom soup.
1 small jar pimentos.

Mix all ingredients together saving 1/3 of grated cheese to spread on top. Bake in oven until cheese is melted and mixture is bubbly.

Mexican Hat

1 lb. ground chuck
3/4 tsp. salt
1 tsp. garlic powder
1 regular jar taco sauce
1 regular can ranch style beans
shredded lettuce shredded cheddar cheese
diced onion
fritos
tomatoes

Make sauce by browning ground chuck, 3/4 tsp. salt, 1 tsp. garlic powder. Then add 1 regular jar taco sauce and 1 regular can ranch style beans. Simmer for 10 minutes.

Top on Plate:
Fritos, meat sauce, lettuce, onions, cheese and tomatoes

Breakfast Casserole

8 eggs
6 slices bread, cubed
1 lb. sausage, browned and drained
2 c. grated cheddar cheese
1 tsp. salt
1 tsp. dry mustard

Mix altogether and put in greased 9 x 13" pan. Cover and refrigerate for 12 hours or overnight. Bake uncovered at 350 for 35 minutes.

King's Ranch Casserole

2 c. chicken
1 can cream of chicken soup
1 1/2 c. cheese
1 can Ro-Tel tomatoes
1 can cream of mushroom soup
1 bag Doritos

Mix together tomatoes and soups and bring to a boil. While the soups are heating, later the chips, chicken and cheese. Pour the soup over the layered part. Bake at 350 for about 5 minutes.

Chicken Chili

3 large onions
1 stick oleo or butter
2 cans chopped green chiles
2 chickens, boiled, boned and cubed
2 1/2 c. tomato juice
crushed Doritos

Cheese Sauce:

1 lb. Velveeta
1 large can carnation milk

Saute onions in butter or oleo. Layer Doritos, meat mix and sauce. Top with Doritos. Bake at 350 for 30 minutes.

Meat Loaf

1 lb. hamburger
1/4 c. minced green pepper
catsup
1 c. tomato juice
1/4 tsp. pepper
1/2 c. cracker crumbs
1 tsp. salt
1/2 tsp. celery salt
1 tsp. poultry seasoning

Mix all ingredients and place in loaf pan. Pour catsup on top. Bake at 350 for 1 hour

Texas Burritos

1 lb. ground beef
1 tsp. garlic powder
1 can refried beans
1 lb. cheddar cheese, grated
flour tortillas, warmed slightly
minced onion (optional)

Brown ground beef and drain well. Add garlic powder, salt and pepper to taste. Season like you would for tacos. Add refried beand and mix well. Place a large spoonful of mixture along center of tortilla. Add about 1 or 2 Tbsp. grated cheese and a few finely minced onions if you like. Roll up, tucking ends in and secure with a toothpick. Fry in about an inch of hot grease, turning once. Drain on paper towels. If you have leftovers, they're great reheated in the microwave.

Mexican Casserole

2 lb. hamburger
1 can mushroom soup
2 cans Ranch Style beans
1 can green chiles and Ro-tel tomatoes
1 large onion
garlic salt or regular salt to taste
black pepper to taste
tortillas
grated cheese

Arrange in 2 layers each with tortillas. Bake at 350 for 1 hour. Use grated cheese on top.

Pork Chops and Vegetables

pork chops
potatoes
carrots
Worcestershire sauce
onions
tomato sauce or soup

Salt pork chops and roll in Worcestershire sauce or season with Worcestershire powder. Then roll in flour and brown in skillet. Add diced potatoes, carrots and onions. Leave grease in skillet. Add 1 can tomato sauce or tomato soup. Cover and simmer for 30 to 40 minutes or until vegetables are done.

Arrange tortillas in pan. Cover with layer of meat mixture, then another layer of tortillas and the rest of the mixture. Add grated cheese on top and bake at 350 for 1 hour.

note: I've made this several times and since the recipe doesn't state and I don't remember my Granny making me ANYTHING but veggies (she called it soul food because she said it was good for the soul), I used corn tortillas.
