Icebox Rolls

1/4 c. water
2 pkg. yeast
1 egg
6 to 7 c. flour
1 Tbsp. salt
2 c. milk
1/3 c. sugar
1 c. shortening or 2/3 c. oil

Dissolve yeast in water. Cream sugar and shortening. Beat egg in sugar and shortening; add to water and yeast. Add flour, 2 cups at a time, mixing well. Set in refrigerator. Will keep at least 3 days.

When ready for rolls, pinch off as much as you want. Let rise double in size. Bake at 425 until brown.

I grew up at the skirt-tail of Granny (Alice Hosey). For those of you who knew her, you know that she spent a lot of time in her vegetable garden and a lot of time in her kitchen stirring up some delicious and memorable meals. I'm sure all of her cooking was great, but my fondest memories are of her cornbread (simply amazing and cooked in an iron skillet on the burner rather than baked in the oven), her chocolate rolls (left over pie crust dough NEVER went to waste!), and my very favorite was her home made yeast rolls. They were to die for! They had that great texture and that yeasty goodness. Of course they always took center stage at the big family gatherings. As a kid, it seemed to me that there were hundreds of those rolls stacked on the table or countertop, but I don't remember that there was ever one left over. She never used a recipe, because she made them so often. This posted recipe was put on paper by my mother, Allene Hosey Shelton, long after Granny stopped baking. She told Mama the ingredients and quantities as best she could remember. Granny passed away in June 2006 at the age of 98. I hope you had the privilege of sitting at Granny's table and tasting her amazing rolls. If not, then mix these up and give them a try. Maybe they'll take you back to your childhood to remind you of your loved ones who lovingly made you your favorite dishes.
